In a small bowl, whisk together garlic, vinegar, mustard, and olive oil. Stir in orange zest, salt and pepper, and mix well. In a large bowl, toss salad gently with oranges, beets, blue cheese, walnuts, and dressing.

2 Tbsp. Red Wine Vinegar
1/2 Tsp. Dijon Mustard
1/3 Cup Olive Oil
2 Tbsp. Orange Zest
1/2 Tsp. Salt
1/2 Tsp. Pepper
